Requirements

  • Proficiency with Google apps (Gmail, drive, spreadsheets, etc.)
  • Ability to lead a team in a fast-paced environment with a high level of ambiguity and change.
  • Strong knowledge of food safety regulations and operational best practices.
  • Outstanding communication and organizational skills. Being able to speak conversational Spanish is strongly preferred.
  • Proven experience in a culinary leadership role, preferably in a high-volume restaurant or hospitality environment.
  • Strong knowledge of culinary techniques, food preparation methods, and kitchen management principles.
  • Excellent organizational and multitasking abilities, with the capacity to prioritize tasks effectively.
  • Exceptional communication and interpersonal skills, with the ability to motivate and inspire a team.
  • Attention to detail and a commitment to upholding high standards of food quality and service.
  • Flexibility to work evenings, weekends, and holidays as required.
  • Comfortable using digital kitchen tools and reporting systems.

Responsibilities

  • Open and close kitchen operations, including seamless handoffs to and from the Overnight Sanitation team.
  • Conduct regular safety and supply checks to ensure proper working conditions and inventory levels.
  • Monitor chef performance and production processes, from ingredient reception through to final plating, ensuring adherence to quality and efficiency standards.
  • Ensure full compliance with Food Safety Plan requirements, including proper handling of allergens and continuous monitoring of food temperatures.
  • Proactively address kitchen operational needs, including safety, sanitation, equipment functionality, maintenance issues, and waste management.
  • Serve as a key point of contact for the Food Safety, Quality Control, and Operations Managers, providing updates and escalation support as needed.
  • Oversee chef checkout process to ensure all closing responsibilities are completed accurately and on time.
  • Monitor chef team shifts, ensuring teams adhere to scheduling expectations and production timelines.
  • Oversee cooking and cooling processes, ensuring temperatures are accurately recorded for all cooked and cooled items.
  • Collaborate with chefs to initiate and manage the cooling process, ensuring proper handling and transfer of food to chilling units.
  • Conduct daily reviews of temperature logs and cooling processes, identifying trends, deviations, and areas for improvement.

Preferred Qualifications

  • Culinary degree or certification from a recognized culinary institution is desirable.
